On Toast – avocado and tomatoes.

Ingredients:

  • 1 slice ciabatta bread
  • 1 avocado
  • a handful of grape tomatoes (approx 8)
  • salt and pepper

Method:

  1. Put bread in toaster, and toast to your preferred crispiness
  2. In a small bowl, smash the avocado, making it a spreadable consistency.
  3. Slice tomatoes.
  4. Once the toast is cooked, thickly smear avocado onto the bread, topping with slices of tomato. Season with salt and pepper (I used my special olive salt).
